Make blueberry simple syrup. Boilthe water, granulated sugar, blueberries, and ginger in a medium saucepan until the sugar dissolves, about 3 minutes. Strain the mixture to remove pieces of blueberry and ginger. Refrigerate simple syrup until ready to make the co*cktails.

Ingredients

Blueberry Simple Syrup

  • 1/2 cup water
  • 1/2 cup granulated sugar, maple syrup, or honey
  • 1-inch knot fresh ginger optional
  • 1/2 cup fresh blueberries (Note 1 Frozen)

Blueberry Mojitos

  • 15-20 fresh mint leaves
  • 1/2 cup blueberries
  • 1/2 cup blueberry simple syrup (above)
  • 4 ounces white rum (silver rum)
  • 1/4 cup fresh lime juice (about 2 limes)
  • Club soda, soda water, or ginger beer to top
  • Fresh limes, mint sprig, fresh basil, and/or blueberries to garnish

Instructions

  • Bring the water, granulated sugar, blueberries and ginger to a boil in a small saucepan over medium-high heat. Simmer for 2-3 minutes, until the sugar is dissolved and the blueberries begin to burst. You can use spoon to mix and smash the berries. The simple syrup will turn a dark blue/purple color.

  • Strain the simple syrup through a fine mesh seive into a measuring cup to remove blueberry pieces and ginger. Allow to cool slightly in the refrigerator until you're ready to make the co*cktails.

  • Add the mint leaves and fresh blueberries to a co*cktail shaker or glass jar with a lid. Use a co*cktail muddler or end of a wooden spoon to press the blueberries and mint to release the juices and mint oils.

  • Pour in the simple syrup, rum, and lime juice. Close the lid and shake really well to combine the co*cktail.

  • Add ice (I like crushed ice) to the bottom of two glasses. Pour the blueberry mojitos over ice. Top with ginger beer or club soda and garnish with a lime slice, mint spring, and more fresh blueberries.
